Eggplant Dumplings Parmigana over Penne


Yotam Ottolenghi just released his new cookbook Flavour and here is one from it. Ricotta, farm eggs & roasted eggplant will make a delicious vegetarian dumpling served over penne pasta.

Ingredients: eggplant, ricotta, egg, flour, parmesan, parsley, tomato, garlic, onion, oregano, basil, olives, salt, penne
