Cochinita Pibil Tacos w/ Pineapple Salsa & Braised Chipotle Black Beans
One of my favorite things to eat when I’m visiting the Yucatan is definitely cochinita pibil. Our homegrown pig shoulders marinated in achiote paste overnight then wrapped in banana leaves and slowly cooked till fall apart tender. Pineapple salsa & a side of black beans to send it to flavor town!
