Local Butternut Squash & Poblano Gratin

I make sure and cook this recipe at least twice a year when butternuts are in season! Medium heat but lots of flavor, poblano peppers pair quite nice with the sweet squash. A few secret seasonings and a dash of cheese and call it good!
